- Slice desired vegetables (such as celery or carrots) and vegan scallops into small pieces.
- In a wok or large skillet, heat a small amount of oil over medium heat.
- Stir-fry the seasonings: 1/3 tablespoon of soy paste, 2/5 tablespoon of vegan XO sauce, and a pinch of salt with some water.
- Once the seasoning begins to boil, add the sliced vegetables and vegan scallops.
- Let the mixture boil again, then add 1/2 tablespoon of cornstarch water to thicken the sauce.
- Stir well, cook for an additional 2-3 minutes, and serve hot.
Oven:
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper or lightly grease it with oil.
- Place the vegan scallops side by side on the baking pan, lightly drizzling them with a little oil.
- Bake for about 15 minutes or until slightly golden brown, flipping the scallops halfway through.
- Serve with your favorite dipping sauce or as part of a main dish.
Grilled:
- Preheat the grill to medium heat.
- Brush the vegan scallops with olive oil and season as desired.
- Grill for about 2-3 minutes on each side until slightly charred and heated through.
