Heat a large, non-stick skillet over medium-high heat. Add 1-2 tablespoons of oil (vegetable, canola, or peanut oil) and swirl to coat the bottom of the pan. Arrange the potstickers in a single layer in the skillet, leaving a little space between each one so they don’t stick together. Flat side down for store-bought potstickers. Let the potstickers cook undisturbed for about 2-3 minutes or until the bottoms are golden brown and crispy. Carefully add about 1/4 cup of water to the skillet. Be cautious, as the oil may splatter when the water is added. Immediately cover the skillet with a tight-fitting lid to trap the steam. Reduce the heat to medium and let the potstickers steam for 5-7 minutes or until the water has mostly evaporated and the filling is cooked through. Once the water has evaporated, remove the lid and let the potstickers cook for another 1-2 minutes to re-crisp the bottoms. Transfer the potstickers to a serving plate with the crispy side up. Serve the potstickers hot with the dipping sauce on the side.
