Skillet Method (Potstickers):
- Heat a large, non-stick skillet over medium-high heat. Add 1-2 tablespoons of oil (vegetable, canola, or peanut oil) and swirl to coat the bottom.
- Arrange the dumplings in a single layer in the skillet, leaving a little space between each one to prevent sticking. Place them flat side down.
- Cook undisturbed for 2-3 minutes until the bottoms are golden brown and crispy.
- Carefully add about 1/4 cup of water to the skillet. Be cautious as the oil may splatter. Immediately cover the skillet with a tight-fitting lid to trap the steam.
- Reduce the heat to medium and steam the dumplings for 5-7 minutes until the water mostly evaporates and the filling is cooked through.
- Once the water evaporates, remove the lid and cook for an additional 1-2 minutes to re-crisp the bottoms.
- Transfer the dumplings to a serving plate with the crispy side up. Serve hot with your favorite dipping sauce.
