Skillet Method:
- Slice all vegetables and the vegan BBQ meat into thin, uniform pieces to ensure even cooking.
- In a small bowl, mix your stir-fry sauce ingredients, including cornstarch to help thicken the sauce. Set aside.
- Heat a large skillet or wok over medium-high heat until hot. Add 1 tablespoon of oil and swirl to coat the pan.
- Add the vegan BBQ meat to the skillet in a single layer and cook for 2-3 minutes. Remove from the skillet and set aside.
- Add another tablespoon of oil to the skillet. Add ginger and stir-fry for about 30 seconds until fragrant.
- Add vegetables, starting with those that take longer to cook (like broccoli and carrots). Stir-fry for 3-4 minutes until they begin to soften.
- Add quicker-cooking vegetables (like bell peppers, snap peas, and zucchini) and stir-fry for another 2-3 minutes.
- Return the cooked vegan BBQ meat to the skillet. Stir the sauce to redistribute the cornstarch and pour it over the meat and vegetables.
- Stir everything together, cooking for 1-2 minutes until the sauce thickens and evenly coats the ingredients.
- Serve hot over steamed rice, noodles, or quinoa, and garnish with sesame seeds, chopped green onions, or fresh cilantro if desired.
