In a small bowl, mix the stir-fry sauce ingredients together, including the cornstarch to help thicken the sauce during cooking. Set aside. Heat a large skillet or wok over medium-high heat until hot. Add 1 tablespoon of oil and swirl to coat the pan. Add the vegan bbq meat to the skillet in a single layer. Cook for 2-3 minutes. Remove the protein from the skillet and set aside. Add the remaining tablespoon of oil to the skillet. Add ginger, and stir-fry for about 30 seconds until fragrant. Add the vegetables, starting with the ones that take longer to cook (like broccoli and carrots). Stir-fry for about 3-4 minutes until they start to soften. Add the quicker-cooking vegetables (like bell peppers, snap peas, and zucchini) and stir-fry for another 2-3 minutes. Return the cooked protein to the skillet with the vegetables. Give the stir-fry sauce a quick stir (to redistribute the cornstarch) and pour it over the meat and vegetables. Stir everything together, cooking for another 1-2 minutes until the sauce thickens and everything is evenly coated. Serve the stir-fry hot over steamed rice, noodles, or quinoa. Garnish with sesame seeds, chopped green onions, or fresh cilantro if desired.
